Soft chocolate chip cookies
Looking for something sweet to round off a festive meal? Rumour has it, these cookies are Santa’s favourite.
Ingredients
Makes 12 cookies
2 ¼ cups flour
1 teaspoon baking soda
1 teaspoon salt
¾ cup unsalted butter, softened
½ cup white sugar
¾ cup brown sugar
1 teaspoon vanilla extract
2 eggs
2 cups semi-sweet chocolate chips
Directions
Preheat the oven to 350 F. Line two cookie sheets with parchment paper.
In a bowl, combine the flour, baking soda and salt. Set aside.
In another bowl, cream the butter, white sugar and brown sugar together using an electric hand mixer until the mixture is light and fluffy (about two to three minutes). Add the vanilla. Incorporate the eggs, one at a time, beating well after each addition.
Gradually add the dry ingredients to the wet ingredients, alternating between the two. Add the chocolate chips. Mix until evenly distributed.
Using a one-tablespoon scoop, place the cookie dough on the baking sheets, spacing them about five centimetres apart.
Bake on the middle rack, one sheet at a time, for 9-11 minutes, or until the edges are golden brown but the centres are still soft. Let the cookies cool on the baking sheet for two minutes before transferring to a wire cooling rack.
