Mushrooms are harvested year-round. The white button is the favorite variety in the U.S., with baby bellas, portabellas, oyster and shiitake also popular.

Mushrooms are 90% water, and they do not need sunlight to grow. Mushrooms double in size in one day, and one acre can produce 1 million pounds of mushrooms annually.
