Brownies with mini chocolate Easter eggs
This decadent chocolate dessert is sure to delight both young and old alike at your Easter gathering.
Ingredients / Servings: 16
1 1/2 cups sugar
3/4 cup all-purpose flour
2/3 cup cocoa powder
1/2 cup icing sugar
1 cup small chocolate eggs with a sweet “shell” (e.g., Cadbury Mini Eggs)
3/4 teaspoon sea salt
2 large eggs
1/2 cup canola oil or extra-virgin olive oil
2 tablespoons water
1/2 teaspoon vanilla
Directions
Preheat the oven to 325 F. Line a square baking dish with lightly greased parchment paper.
In a medium bowl, combine the sugar, flour, cocoa powder, icing sugar, chocolate eggs and salt.
In a large bowl, whisk together the eggs, oil, water and vanilla.
Add the dry mixture to the wet mixture and stir until just combined. Don’t overmix.
Pour the batter into the prepared baking dish. Use a spatula to smooth the top.
Bake for 40 to 48 minutes, or until a toothpick inserted into the centre comes out clean.
Let cool completely before cutting.
